Zucchini Noodles with Tomatoes, Black Olives, Garlic, and Feta Cheese


INGREDIENTS: (serves two)
  • 1 dry pint tomatoes
  • 1/2 cup Kalamata olives pitted
  • 1/4 cup feta cheese, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh-ground black pepper
  • 6 tablespoons olive oil
  • 2 cloves garlic, minced
3 large zucchini

2 fresh basil leaves

HOW TO MAKE THIS RECIPE:

In a large bowl combine the tomatoes, olives, feta, salt, and pepper. 

  1. Meanwhile, in a medium frying pan, heat the olive oil over moderately low heat. Add the garlic and cook, stirring, for 1 minute. 
  2. Add the zucchini noodles to the garlic oil and cook for an additional 3 minutes on medium heat, covered. 
  3. Then add the tomato and olive mixture, cook for an additional 5 minutes, covered. Top with chopped basil, serve and enjoy!
