Juicy Pork Carnitas with Avocado Cilantro Lime Crema


INGREDIENTS: (serves FOUR)
  • 2.5 Pound Pork Shoulder
  • 2 Cups of Chicken Stock
  • Two packs of Old El Paso Hot & Spicy Taco Seasoning Mix
  • 1 TBS Salt
  • 1 TBS Pepper
  • 1 TBS Red Pepper Flakes
  • Tortillas
  • 1 Jalapeno
  • 2 Avocadoes
  • ½ Cup Sour Cream
  • 1 Cup Cilantro
  • 1 Lime 
HOW TO PREPARE:
  • Place pork shoulder, chicken stock, taco seasoning, salt, pepper, and red pepper flakes in your Crock Pot on low for 8-10 hours
  • In a food processor (I use a Vitamix), combine two ripe avocadoes, ½ cup of sour cream, ¾ cup of Cilantro, and the juice of one lime. Process until blended. Refrigerate.
  • After pork is cooked fully, it should be pull apart tender, if you don’t want to spend the time shredding with a fork, you can chop the meat like I do
  • Prepare Carnitas by assembling your tortillas with shredded pork, avocado cilantro lime cream, remaining fresh cilantro, chopped jalapenos, and fresh lime juice
